It features a wide spine to edge profile making it an excellent knife for cutting thicker food items and allowing the knife to separate slices with a twist of your wrist such as when cutting meat loaf. Another great feature to the Camp Kitchen is the thumb scallops and the familiar Genesis handle shape. It works well for everything from meat to vegetables. The Camp Kitchen knife features Austrian made AEB-L stainless steel. This is the same steel that they make razor blades from. AEB-L holds a very good edge with the carbon content allowing for ease of sharpening and the chromium content helping in the rust prevention of the steel.
